Our Story
Meet Jeff & Nichole - Our Family
Jeff and Nichole Gaffney have called North Florida home for more than 30 years, raising a family and pursuing a life centered on faith, hard work, and the simple joys of homesteading.
Our greatest blessing has been becoming the adoptive parents of our three amazing boys. We first became foster parents, and they were the very first children to come into our home. After many ups and downs with the foster care system, we experienced the heartbreak of watching the boys be moved out of our home. We were devastated by the court's decisions, but God was not finished writing our story. The boys were eventually brought back into our home, and we had the incredible privilege of adopting all three of them.
Today, they are at the heart of everything we do. They love helping around the homestead—whether it's working in the garden, caring for our bees and chickens, raising and processing our own meat chickens, or lending a hand with our latest projects.
Nichole brings more than 12 years of professional baking experience, including bakery work, cake decorating, and high-end food service. Her passion for baking, especially sourdough, has become one of the cornerstones of Gaffney Homestead. She also homeschools our three boys and is passionate about helping them grow in knowledge, character, and an appreciation for God's creation.
Jeff has spent more than 26 years as a licensed optician. Outside of his profession, he builds chicken coops, installs irrigation systems, and takes on a variety of projects that make life on the homestead more efficient and daily chores more manageable. One of his greatest passions is helping raise his sons with strong character, believing that, "Knowledge is important and vital in life, but character defines who we are."
Together, we share a passion for self-sufficiency, and living a more intentional life. We enjoy growing our own food, raising and processing our own meat chickens, making quality products, being good stewards of what God has given us, and encouraging others.
Our faith in Jesus Christ is the foundation of our home and our business. We strive to honor Him in everything we do and are grateful for the opportunity to share this journey with you.
